Healthy Recipes for Back to School

                          Easy Pizza Roll-Ups

1 12” whole wheat flour tortilla

2 Tablespoons Pizza sauce

3 tablespoons part-skim mozzarella cheese, shredded

12 baby spinach leaves

3 slices Canadian bacon, diced

Combine the pizza sauce and mozzarella cheese in a small bowl. Spread evenly over the tortilla. Next, layer the spinach and top with the diced bacon. Microwave for 20 to 30 seconds. Roll the tortilla up. Slice into 1” slices and pack in an airtight container. Serve with low-fat ranch dressing.

Other combinations to “Roll-Up”:

*Low-fat cheddar cheese, lean turkey and cucumber slices

*Salsa and low-fat cream cheese

*Lean ham, Swiss cheese and honey mustard

*Tuna Salad, chopped celery and pickles

 A Perfect Picnic Recipe

Marinated Heirloom Tomatoes with Pistachios and Peppercorns

adapted from recipe by Chef Juanita Barrientos

1/3 cup salted roasted pistachios, coarsely chopped
1/3 cup very finely chopped shallots
2 Tablespoons small capers, rinsed
2 Tablespoons Champagne vinegar
2 teaspoons sugar
1 teapspoon black crushed peppercorns
2 tablespoons extra-virgin olive oil, plus more for drizzling
sea salt
4 red heirloom tomatoes
small basil leaves, for garnish

In a jar, combine the pistachios with the shallots, capers, vinegar, sugar, black peppercorns and the 2 tablespoons of olive oil. Season with sea salt and let rest for at least 1 hour. Arrange the tomato slices on plates. Drizzle lightly with olive oil and sprinkle with sea salt. Spoon the pistachio mixture over the tomatoes. Garnish with basil leaves and serve.

Super Spread Sandwich Stars

Spread:

  • 1 red or Golden Delicious apple, peeled, cored and coarsely chopped
  • 1 cup roasted peanuts
  • 1/3 cup honey
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • Sliced sandwich bread

Place apple, peanuts, honey, lemon juice, and cinnamon in food processor or blender and pulse several times until ingredients are blended and smooth.

Sandwiches:

Spread 1 tablespoon of Super Spread on 2 slices of bread. Stack them together, spread side up. Top with third slice of bread. Place cookie cutter on top of sandwich; press down firmly and evenly. Leaving cookie cutter in place, remove excess trimmings with your fingers or a butter knife. Remove cookie cutter

*makes 1 ¼ cup spread = 10 sandwiches

Fun Fruit Kebabs

  • 1 apple, cut into chunks
  • 1 banana, cut into chunks
  • 1/3 cup red seedless grapes
  • 1/3 cup green seedless grapes
  • 2/3 cup pineapple chunks
  • 1 cup nonfat vanilla yogurt
  • ¼ cup dried coconut, shredded
  • 4 6” wooded skewers

Spread coconut onto a large plate. Slide pieces of fruit onto the skewer, alternating with your favorite ones. Hold your kebob at the ends and roll it in the yogurt so the fruit gets covered. Then roll it in the coconut. Enjoy!

Inside-Out Turkey Sandwiches

Spread:

  • 2 tablespoons cream cheese
  • 2 tablespoons shredded low-fat cheese
  • 1 teaspoon mustard

Combine all ingredients in a small bowl and mix well.

  • 12 thin round low-fat turkey breast slices
  • 4 large pretzel logs

Arrange 3 turkey slices on large sheet of plastic wrap, overlapping slices in center. Spread ¼ of cream cheese mixture evenly on turkey slices, covering slices completely. Place one pretzel at bottom edge of turkey slices; roll up turkey around pretzel. Be sure to keep all 3 turkey slices together as you roll them around pretzel. Repeat with remaining ingredients.
